Jose Maria is the owner of a famous restaurant in Segovia which serves roasted suckling pig, the star of the regional cuisine. 30 years ago, José Maria had a dream: he wanted to create the best red wine not only for its restaurant but specifically for a perfect wine & suckling pig pairing. To achieve his dream, he created a winery in an area of old vineyards where the Tempranillo variety was the absolute king.
Jean says: “Jose María had an idea: he decided to add 25% of Carbernet Sauvignon and to use French roble barrels, which at that time and in this region was an absolute act of vanguard, and nobody believed in his project!
That way Pago de Carraovejas was born, a red wine which is now considered by many as one of the best worldwide, among them Robert Parker who loves to go to Jose María’s restaurant and has become a friend. This winery of very limited production is not only the history of Jose Maria and his family, but a true symbol of the so-called Spanish revolution”.
